Description

These Strawberry Cheesecake Bites are a delightful, bite-sized treat featuring fresh strawberries stuffed with creamy cheesecake filling. Perfect for parties, holidays, or a quick dessert, they’re easy to make and absolutely irresistible.

Ingredients

Units Scale

For the Cheesecake Filling:

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (50 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice (optional, for a tangy flavor)

For the Strawberries:

  • 2025 large fresh strawberries
  • 1/4 cup (30 g) graham cracker crumbs (optional, for garnish)
  • 12 tablespoons melted chocolate (optional, for drizzling)

Instructions

Prepare the Strawberries:

  1. Wash and Hollow:
    • Wash the strawberries and pat them dry with a paper towel.
    • Cut off the tops and use a small spoon or melon baller to hollow out the center of each strawberry to make room for the filling.
  2. Optional Stabilization:
    • If needed, slice a small portion off the bottom of each strawberry so they can stand upright.

Make the Cheesecake Filling:

  1. Beat the Filling:
    • In a mixing bowl, beat the cream cheese, powdered sugar, vanilla extract, and lemon juice (if using) until smooth and creamy.
  2. Transfer to Piping Bag:
    • Spoon the filling into a piping bag fitted with a star or round tip. If you don’t have a piping bag, use a resealable plastic bag with a small corner snipped off.

Assemble the Cheesecake Bites:

  1. Fill the Strawberries:
    • Pipe the cheesecake filling into the hollowed-out strawberries, creating a decorative swirl on top if desired.
  2. Garnish:
    • Sprinkle graham cracker crumbs over the filled strawberries for a classic cheesecake touch.
    • Drizzle melted chocolate over the tops for extra flair (optional).

Serve and Enjoy:

  1. Chill and Serve:
    • Refrigerate the stuffed strawberries for at least 15 minutes before serving to let the filling set.
    • Serve chilled and enjoy!

Notes

  • Make Ahead: Prepare the filling and strawberries a few hours in advance and assemble just before serving to keep the strawberries fresh.
  • Variations: Add crushed Oreos, nuts, or shredded coconut to the garnish for different flavor combinations.
  • Storage: Store in an airtight container in the refrigerator for up to 2 days.
