Ingredients
For the chicken:
-
4 boneless, skinless chicken breasts
-
1 tablespoon olive oil
-
1 teaspoon garlic powder
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
For the strawberry bruschetta topping:
-
1 1/2 cups fresh strawberries, diced
-
1 tablespoon balsamic vinegar
-
1 tablespoon honey or maple syrup
-
1 tablespoon red onion, finely chopped (optional)
-
1 garlic clove, minced
-
2 tablespoons fresh basil, chopped
-
Salt and pepper, to taste
For serving:
-
Balsamic glaze, for drizzling
-
Extra chopped basil, for garnish
Instructions
-
Prep the chicken: Rub chicken breasts with olive oil, garlic powder, salt, and pepper. Let sit while you prepare the topping.
-
Make the strawberry bruschetta: In a medium bowl, combine diced strawberries, balsamic vinegar, honey (or maple syrup), red onion (if using), garlic, and basil. Season with salt and pepper to taste. Set aside to let the flavors meld.
-
Cook the chicken: Heat a grill or grill pan over medium-high heat. Grill chicken for 5–6 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for a few minutes.
-
Assemble: Spoon the strawberry bruschetta topping over the grilled chicken breasts. Drizzle with balsamic glaze and sprinkle with extra basil.
-
Serve: Serve warm with a side of greens, roasted veggies, or over a bed of quinoa or rice for a complete meal.
Notes
-
You can prep the bruschetta topping a few hours in advance, but add basil just before serving for best flavor.
-
Swap in goat cheese or feta crumbles for extra richness.
-
Great served cold or at room temperature for potlucks and picnics.
