Description

This Strawberry Avocado Corn Salad is sweet, tangy, and loaded with summer flavor. Fresh strawberries, creamy avocado, juicy corn, and a zesty lime dressing make this salad the perfect side for picnics, BBQs, or light lunches. It’s quick to throw together and always a hit!


Ingredients

  • 1 1/2 cups fresh strawberries, hulled and sliced

  • 1 large avocado, diced

  • 1 cup corn kernels (fresh, grilled, or thawed from frozen)

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 tablespoon olive oil

  • 1 tablespoon fresh lime juice

  • Salt and black pepper to taste

  • Optional: 1/4 cup crumbled feta or cotija cheese


Instructions

  1. In a large bowl, gently combine the strawberries, avocado, corn, red onion, and cilantro.

  2. Drizzle with olive oil and lime juice.

  3. Season with salt and pepper, and toss lightly to mix.

  4. Add feta or cotija if using, and serve immediately or chill for 10–15 minutes.


Notes

  • Use grilled or roasted corn for extra flavor.

  • Best served fresh, but you can prep the ingredients ahead and mix just before serving.

  • Add baby spinach or arugula to make it a more filling salad.
