For the Potatoes:

For the Steak:
- 1 1/4 pounds (570g) sirloin steak, cut into 1-inch cubes
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter, divided
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Chopped fresh parsley, for garnish (optional)

Prepare the Potatoes:
- Heat a large cast-iron skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.
- Once the butter has melted, add the diced potatoes. Season with garlic powder, paprika, salt, and pepper.
- Cook for about 4 minutes without stirring to allow a crust to form. Then, stir and cook for an additional 4 minutes, or until the potatoes are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.

Cook the Steak Bites:
- In the same skillet, increase the heat to high. Add olive oil and 1 tablespoon of butter.
- Once the butter has melted, add the steak bites in a single layer, making sure not to overcrowd the pan. Season with salt and pepper.
- Let the steak sear for 1 minute without stirring, then stir and cook for another 1-2 minutes, or until they reach your desired level of doneness. Remove the steak bites from the skillet and set them aside.

Prepare the Garlic Butter Sauce:
- Reduce the heat to medium. In the same skillet, add the remaining 1 tablespoon of butter.
- Once melted, add the minced garlic, dried thyme, rosemary, and oregano. Sauté for about 1 minute, or until the garlic becomes fragrant.

Combine Steak and Potatoes:
- Return the cooked steak bites and potatoes to the skillet, tossing them to coat in the garlic butter sauce. Let them warm through for about 1-2 minutes.

- Transfer the steak bites and potatoes to a serving platter. Garnish with freshly chopped parsley, if desired. Serve immediately and enjoy!

For a quicker alternative, you can cook the potatoes in an air fryer at 400°F (200°C) for about 15-20 minutes, shaking the basket halfway through, until they are crispy and golden.
