Description

This dish features tender, juicy steak bites and crispy potatoes, all tossed in a rich garlic butter sauce. It’s a hearty and flavorful meal that’s perfect for any occasion.

For the Potatoes:

  • 1 pound (450g) Yukon Gold potatoes, diced into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

For the Steak:

 

  • 1 1/4 pounds (570g) sirloin steak, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Chopped fresh parsley, for garnish (optional)

Instructions

 

  1. Prepare the Potatoes:

    • Heat a large cast-iron skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.
    • Once the butter has melted, add the diced potatoes. Season with garlic powder, paprika, salt, and pepper.
    • Cook for about 4 minutes without stirring to allow a crust to form. Then, stir and cook for an additional 4 minutes, or until the potatoes are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.
  2. Cook the Steak Bites:

    • In the same skillet, increase the heat to high. Add olive oil and 1 tablespoon of butter.
    • Once the butter has melted, add the steak bites in a single layer, making sure not to overcrowd the pan. Season with salt and pepper.
    • Let the steak sear for 1 minute without stirring, then stir and cook for another 1-2 minutes, or until they reach your desired level of doneness. Remove the steak bites from the skillet and set them aside.
  3. Prepare the Garlic Butter Sauce:

    • Reduce the heat to medium. In the same skillet, add the remaining 1 tablespoon of butter.
    • Once melted, add the minced garlic, dried thyme, rosemary, and oregano. Sauté for about 1 minute, or until the garlic becomes fragrant.
  4. Combine Steak and Potatoes:

    • Return the cooked steak bites and potatoes to the skillet, tossing them to coat in the garlic butter sauce. Let them warm through for about 1-2 minutes.
  5. Serve:

    • Transfer the steak bites and potatoes to a serving platter. Garnish with freshly chopped parsley, if desired. Serve immediately and enjoy!

Notes

  • For a quicker alternative, you can cook the potatoes in an air fryer at 400°F (200°C) for about 15-20 minutes, shaking the basket halfway through, until they are crispy and golden.

 

  • Feel free to customize the herbs used in this recipe to your preference. Fresh herbs can also be used in place of dried ones for a more vibrant flavor.
