Description

Spinach and feta bourekas are savory Middle Eastern pastries made with flaky puff pastry and a delicious spinach-cheese filling. Perfect as an appetizer, snack, or light meal.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
  • 1/2 cup crumbled feta cheese
  • 1 egg, beaten (divided: half for filling, half for egg wash)
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley (optional)
  • Sesame seeds, for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine spinach, feta, half of the beaten egg, pepper, and parsley if using. Mix well.
  3. Roll out puff pastry on a floured surface and cut into 6 equal squares or rectangles.
  4. Spoon a small amount of the filling onto one side of each square, leaving space at the edges.
  5. Fold over into a triangle or rectangle and press edges to seal with a fork.
  6. Transfer to the baking sheet and brush tops with remaining egg.
  7. Sprinkle with sesame seeds if desired.
  8. Bake for 20–25 minutes or until golden brown and puffed.
  9. Cool slightly before serving.

Notes

  • Make sure the spinach is well drained to avoid soggy pastry.
  • Serve warm or at room temperature.
  • You can make these ahead and reheat in the oven before serving.
