- 2 cups fresh pineapple, finely diced
- 2–3 jalapeños, finely chopped (seeds removed for less heat)
- 1/2 cup red onion, finely diced
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 tbsp fresh ginger, grated
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1 tbsp olive oil
Instructions
- Heat the olive oil in a saucepan over medium heat.
- Add the red onion and sauté until translucent, about 3-4 minutes.
- Stir in the jalapeños and ginger, cooking for another 2 minutes.
- Add the pineapple, apple cider vinegar, brown sugar, cumin, cinnamon, and salt to the pan.
- Bring the mixture to a simmer, stirring occasionally.
- Cook for 20-25 minutes, until the chutney thickens and the pineapple softens.
- Remove from heat and let cool slightly.
- Transfer to a jar or container and refrigerate until ready to use. It will thicken further as it cools.
Notes
- Adjust the number of jalapeños based on your preferred spice level.
- Chutney can be stored in the refrigerator for up to 2 weeks.
- Serve with grilled chicken, pork, seafood, or cheese platters.
- For a smoother texture, mash slightly with a fork after cooking.
