Description

A bold and flavorful Korean-inspired dish featuring tender chicken marinated in spicy gochujang sauce, then grilled or pan-seared to perfection.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp gochujang (Korean red chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil (for cooking)
  • 2 green onions, sliced (for garnish)
  • 1 tsp sesame seeds (optional)

Instructions

  1. In a bowl, whisk together gochujang, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger to make the marinade.
  2. Add chicken thighs to the bowl and coat evenly with the marinade. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours.
  3. Heat vegetable oil in a skillet or grill pan over medium-high heat.
  4. Cook the chicken for 5-6 minutes on each side, or until fully cooked and nicely charred.
  5. Remove from heat and let rest for a few minutes.
  6. Slice the chicken and garnish with green onions and sesame seeds before serving.

Notes

  • Adjust the amount of gochujang based on your heat preference.
  • This dish pairs well with steamed rice or noodles.
  • You can also bake the chicken in a 400°F oven for 20-25 minutes.
