Description

This delightful jam combines the sweetness of ripe fruits with warm holiday spices, creating a perfect spread for toast, biscuits, or gifting during the festive season.


Ingredients

  • 2 cups (250g) fresh or frozen cranberries
  • 2 cups (250g) strawberries or raspberries, hulled
  • 1 medium apple, peeled, cored, and grated
  • 2 cups (400g) granulated sugar
  • 1/2 cup (120ml) orange juice (freshly squeezed, if possible)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Fruits:
    • In a large saucepan, combine the cranberries, strawberries (or raspberries), and grated apple. Add the orange juice and bring to a simmer over medium heat.
  2. Cook the Fruits:
    • Cook the mixture for 10-15 minutes, stirring occasionally, until the cranberries burst and the fruit softens. Mash the mixture with a potato masher or the back of a spoon to your desired consistency.
  3. Add Sugar and Spices:
    • Stir in the sugar, cinnamon, nutmeg, and cloves. Increase the heat slightly and bring the mixture to a gentle boil. Cook for another 10-15 minutes, stirring frequently, until the jam thickens.
  4. Check for Doneness:
    • To test if the jam is ready, place a small spoonful on a chilled plate and let it cool for a minute. Run your finger through it—if it holds its shape and doesn’t run, it’s done.
  5. Add Vanilla and Jar the Jam:
    • Remove the pan from heat and stir in the vanilla extract. Ladle the hot jam into sterilized jars, leaving ¼-inch headspace at the top. Seal the jars tightly.
  6. Cool and Store:
    • Allow the jars to cool to room temperature. Store in the refrigerator for up to 3 weeks or process in a boiling water bath for 10 minutes to preserve for up to 1 year.
