- 6 cups yellow squash, sliced
- 1 small onion, finely chopped
- 2 tablespoons butter
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 sleeve buttery crackers (such as Ritz), crushed
- 2 tablespoons melted butter (for topping)
- Butter or non-stick spray for greasing the baking dish
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, melt butter and sauté squash and onion until tender, about 10 minutes. Drain any excess liquid.
- In a large bowl, combine sour cream, mayonnaise, shredded cheese, eggs, garlic powder, salt, and pepper.
- Add cooked squash and onion to the bowl and stir until well mixed.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with crushed crackers and drizzle with melted butter.
- Bake for 35-40 minutes or until golden and bubbly. Let sit for a few minutes before serving.
Notes
- You can prep the casserole a day ahead and bake it fresh.
- Substitute Greek yogurt for sour cream for a lighter version.
- Try adding a pinch of cayenne or chopped jalapeños for a spicy twist.
