Southern Chocolate Cobbler is a warm, decadent dessert with a rich chocolate filling and a crisp, brownie-like topping. As it bakes, the chocolate sauce forms underneath, creating a luscious layer perfect for spooning over ice cream or whipped cream.

For the Chocolate Topping:

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup cocoa powder
  • 1 1/2 cups boiling water


Instructions

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. Make the Batter:

    • In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt. Stir in the milk, melted butter, and vanilla until smooth. Spread the batter evenly in the prepared baking dish.
  3. Add the Topping:

    • In a separate bowl, mix the granulated sugar, brown sugar, and cocoa powder. Sprinkle this mixture evenly over the batter.
  4. Add the Hot Water:

    • Carefully pour the boiling water over the top of the cobbler. Do not stir.
  5. Bake:

    • Bake for 35-40 minutes, or until the top is set and firm but the bottom is gooey. The cobbler should have a sauce layer beneath the cake-like top.
  6. Serve:

    • Let the cobbler cool for about 10 minutes before serving. Spoon into bowls and top with vanilla ice cream or whipped cream.
