- 1 cup active sourdough starter (100% hydration)
- 1/2 cup warm milk
- 1/4 cup unsalted butter, melted and cooled
- 2 tablespoons honey or sugar
- 1 large egg
- 1 teaspoon salt
- 1 tablespoon melted butter, for brushing
Instructions
- In a large bowl or stand mixer, combine the active sourdough starter, warm milk, melted butter, honey, and egg. Mix until well combined.
- Add the flour and salt. Mix until a soft dough forms, then knead for 5–7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 4–6 hours or until doubled in size.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place in a greased 9×13-inch baking dish.
- Cover and let the rolls rise again for 1–2 hours, until puffy and touching each other.
- Preheat oven to 375°F (190°C). Bake rolls for 20–25 minutes, until golden brown on top.
- Brush warm rolls with melted butter and serve.
Notes
- Make sure your sourdough starter is active and bubbly before using.
- For an overnight option, let the shaped rolls proof in the fridge overnight, then bake the next day.
- These rolls freeze well; thaw and warm before serving.
