Instructions
- Prepare the Dough:
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add eggs, vanilla extract, and almond extract, mixing well to combine.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing.
- Chill the Dough:
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour (or up to overnight). This helps the cookies hold their shape during baking.
- Roll and Cut:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to cut shapes, then place on prepared baking sheets about 2 inches apart.
- Bake:
- Bake for 8-10 minutes, or until the edges are just starting to set but not browned. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Make the Frosting:
- In a bowl, beat together the cream cheese and butter until smooth. Gradually add powdered sugar, beating until creamy. Add vanilla extract and enough milk to reach a spreadable consistency.
- Optional: Add food coloring to tint the frosting.
- Decorate:
- Once the cookies are completely cool, frost each cookie and decorate with sprinkles as desired.
Notes
- Storage: Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Make Ahead: The dough can be made and refrigerated for up to 2 days before baking.
