- 2 3/4 cups (340g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup (230g) unsalted butter, softened
- 1 1/2 cups (300g) granulated sugar (plus extra for rolling)
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional, for extra flavor)
Instructions
-
Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
-
Prepare the Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
-
Cream the Butter and Sugar:
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
-
Add the Wet Ingredients:
- Add the egg, vanilla extract, and almond extract (if using) to the butter mixture. Beat until smooth and well combined.
-
Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
-
Shape and Roll the Dough:
- Scoop about 1 1/2 tablespoons of dough and roll it into a ball. Roll each ball in extra granulated sugar, coating it evenly.
- Place the dough balls on the prepared baking sheets, about 2 inches apart.
-
Bake:
- Bake in the preheated oven for 8-10 minutes, or until the edges are just beginning to turn golden. The centers should look soft and slightly underbaked.
-
Cool and Serve:
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Add sprinkles: Roll the dough balls in colored sugar or sprinkles for a festive touch.
- Make it frosted: Top with vanilla or cream cheese frosting once the cookies have cooled.
- Storage: Store in an airtight container at room temperature for up to 5 days, or freeze for up to 2 months.
