Description

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (230g) unsalted butter, softened
  • 1 1/2 cups (300g) granulated sugar (plus extra for rolling)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional, for extra flavor)

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Prepare the Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • Cream the Butter and Sugar:

    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the Wet Ingredients:

    • Add the egg, vanilla extract, and almond extract (if using) to the butter mixture. Beat until smooth and well combined.
  • Combine Wet and Dry Ingredients:

    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Shape and Roll the Dough:

    • Scoop about 1 1/2 tablespoons of dough and roll it into a ball. Roll each ball in extra granulated sugar, coating it evenly.
    • Place the dough balls on the prepared baking sheets, about 2 inches apart.
  • Bake:

    • Bake in the preheated oven for 8-10 minutes, or until the edges are just beginning to turn golden. The centers should look soft and slightly underbaked.
  • Cool and Serve:

    • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
