- 1 cup coconut milk (canned, full-fat or light)
- 2 cups lemon-lime soda or ginger ale, chilled
- 1 cup sparkling water (optional, for extra fizz)
- 1/2 cup cream of coconut (e.g., Coco Lopez)
- Ice cubes or crushed ice
- Garnishes: shredded coconut, pineapple wedges, or maraschino cherries
Instructions
- Prepare the Punch Base:
- In a large pitcher or punch bowl, whisk together the pineapple juice, coconut milk, and cream of coconut until smooth.
- Add the Fizz:
- Just before serving, gently stir in the lemon-lime soda and sparkling water (if using) for fizz.
- Serve:
- Fill glasses with ice cubes or crushed ice. Pour the punch into the glasses.
- Garnish:
- Sprinkle shredded coconut on top of each glass for a snowy effect. Add a pineapple wedge or maraschino cherry on the rim for decoration.
Notes
- For an adult version, add 1–2 cups of rum or coconut rum to the punch.
- To make it extra festive, rim the glasses with shredded coconut: dip the rims in pineapple juice, then into coconut before pouring in the punch.
- This recipe can be doubled or tripled for larger gatherings.
