The Snowy Bavarian Bliss Cake is a delightful dessert that combines a moist white cake with a rich coconut-pecan frosting. This cake is perfect for special occasions or whenever you crave a sweet, indulgent treat.

For the Cake:

1 package white cake mix

1 cup buttermilk

½ cup vegetable oil

4 large egg whites

1 teaspoon vanilla extract

For the Frosting:

½ cup unsalted butter

1 cup granulated sugar

1 cup evaporated milk

3 large egg yolks

1 teaspoon vanilla extract

1½ cups sweetened shredded coconut

1 cup chopped pecans

Instructions

Prepare the Cake:

 

Preheat the oven to 350°F (175°C).

Grease and flour two 9-inch round cake pans.

In a large bowl, combine the white cake mix, buttermilk, vegetable oil, egg whites, and vanilla extract.

Beat on medium speed until the batter is smooth and well combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Prepare the Frosting:

 

In a medium saucepan, melt the unsalted butter over medium heat.

Stir in the granulated sugar, evaporated milk, and egg yolks.

Cook, stirring constantly, until the mixture thickens and turns a golden-brown color, about 10-12 minutes.

Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.

Allow the frosting to cool slightly before using.

Assemble the Cake:

 

Place one cake layer on a serving plate.

Spread a portion of the frosting over the top.

Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.

Allow the cake to set before slicing and serving.

 

Notes

Ensure the cake layers are completely cooled before frosting to prevent the frosting from melting.

For added flavor, toast the shredded coconut and pecans before adding them to the frosting.

Store any leftovers in an airtight container at room temperature for up to 3 days.
