For the sugar cookies:
- 2 3/4 cups (350 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
For the decorations and candy glass:
- 1/2 cup (100 g) clear hard candies (e.g., Jolly Ranchers or clear mints)
- Royal icing (store-bought or homemade)
- Festive sprinkles, small edible decorations, or mini holiday candies
Instructions
1. Prepare the cookie dough:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar together until light and fluffy, about 2–3 minutes.
- Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until combined.
2. Chill the dough:
- Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
3. Roll and cut the cookies:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll out the chilled dough to about 1/4-inch thickness. Use a round cookie cutter (3-4 inches) to cut out circles for the base of the snow globes.
- For half of the cookies, use a smaller round or snowflake-shaped cutter to cut out the center, creating a frame for the candy glass.
4. Add the candy glass:
- Place the “frame” cookies on the baking sheet and fill the center cutout with crushed clear candies.
- Bake both the base and frame cookies for 8–10 minutes, or until lightly golden. Cool completely on the baking sheet to allow the candy to harden.
5. Decorate the cookies:
- Use royal icing to attach a “frame” cookie to a solid base cookie, creating the snow globe effect.
- Pipe royal icing on the solid cookie and decorate with festive sprinkles, mini candies, or edible decorations to resemble a holiday scene.
- Once decorated, attach the candy “frame” cookie on top using royal icing. Let set completely.
6. Serve and enjoy:
- Display these cookies as edible centerpieces or give them as gifts.
Notes
- For a simpler version, skip the snow globe effect and decorate the sugar cookies with royal icing and sprinkles.
- Store cookies in an airtight container at room temperature for up to 1 week.
- If using colored hard candies, opt for light colors to maintain the “glass” look.
