Description

Decadent cookie bars that layer chocolate chip cookie dough with gooey marshmallows and rich milk chocolate—easy to bake and perfect for s’mores lovers.


Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups all‑purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups semisweet chocolate chips
  • 2 cups mini marshmallows
  • 1 cup chopped graham crackers (about 8-10 sheets)
  • 1/2 cup milk chocolate chunks (optional extra)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13‑inch baking pan with parchment, leaving an overhang.
  2. In a large bowl, cream butter with granulated and brown sugars until light and fluffy, about 2–3 minutes.
  3. Add eggs one at a time, beating well after each, then stir in vanilla.
  4. Whisk flour, baking soda, and salt; gradually add to butter mixture until just combined.
  5. Fold in chocolate chips and graham cracker pieces.
  6. Press half the dough into the bottom of the prepared pan, creating an even base.
  7. Sprinkle mini marshmallows evenly over the dough, then top with the remaining dough (drop by spoonfuls and press gently to cover marshmallows).
  8. If using, sprinkle milk chocolate chunks over the top.
  9. Bake 25–30 minutes, until edges are golden and center is set but slightly soft.
  10. Let cool completely in pan on a wire rack (about 1 hour). Use parchment overhang to lift bars out, then cut into squares.
  11. Store airtight at room temperature up to 3 days or freeze for longer storage.

Notes

  • For extra gooeyness, press a few extra marshmallows into the surface immediately after baking.
  • Substitute dark chocolate chips or white chocolate for a different flavor.
  • To make smaller bars, use a 9×9‑inch pan and reduce bake time by 5 minutes.
  • Bars are best after cooling fully—cutting too soon makes them too soft.
  • Freeze individual squares on parchment, then store in freezer bags for easy grab‑and‑go treats.
