Description

This S’mores Cake is rich, gooey, and packed with all the classic s’mores flavors—layers of chocolate cake, graham cracker crumbs, and toasted marshmallow frosting! Perfect for summer parties, birthdays, or anytime you crave a campfire treat in cake form.


Ingredients

For the Graham Cracker Crust:

  • 1 1/2 cups (150 g) graham cracker crumbs
  • 1/4 cup (50 g) granulated sugar
  • 6 tablespoons (85 g) butter, melted

For the Chocolate Cake:

  • 1 3/4 cups (220 g) all-purpose flour
  • 3/4 cup (75 g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 2 large eggs
  • 1/2 cup (120 ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) buttermilk (or milk + 1 tsp vinegar)
  • 1/2 cup (120 ml) hot coffee or hot water

For the Marshmallow Frosting:

  • 1 cup (200 g) granulated sugar
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

For Garnish:

  • 1/2 cup chocolate ganache or melted chocolate
  • Mini marshmallows (for toasting)
  • Crushed graham crackers



Instructions

1️⃣ Make the Graham Cracker Crust

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press into the bottom of two 9-inch cake pans.
  4. Bake for 8 minutes, then set aside.

2️⃣ Make the Chocolate Cake

  1. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk sugars, eggs, oil, vanilla, and buttermilk.
  3. Gradually mix wet and dry ingredients, then stir in hot coffee/water until smooth.
  4. Pour batter over the graham cracker crust in each pan.
  5. Bake for 30-35 minutes, until a toothpick comes out clean.
  6. Cool completely before frosting.

3️⃣ Make the Marshmallow Frosting

  1. In a heatproof bowl, whisk egg whites, sugar, and cream of tartar over simmering water (double boiler method) for 3-4 minutes, until sugar dissolves.
  2. Remove from heat and beat on high speed until fluffy and forms stiff peaks (5 minutes).
  3. Mix in vanilla extract.

4️⃣ Assemble the Cake

  1. Place one cake layer on a plate, spread with marshmallow frosting.
  2. Add the second cake layer and frost the top and sides.
  3. Drizzle with melted chocolate or ganache.

5️⃣ Toast & Garnish

  1. Use a kitchen torch to toast the marshmallow frosting for a campfire effect.
  2. Top with mini marshmallows and crushed graham crackers.

6️⃣ Slice & Enjoy!

  • Serve immediately or chill for 30 minutes before slicing.

Notes
