- 2 pounds ripe tomatoes, halved
- 1 small onion, quartered
- 4 cloves garlic, peeled
- 2 tablespoons olive oil
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: additional basil and croutons for serving
Instructions
- Preheat smoker to 225°F (107°C) using cherry, oak, or hickory pellets.
- Place tomatoes, onion, and garlic on a grill-safe tray. Drizzle with olive oil and season with salt and pepper.
- Smoke for 1.5 to 2 hours until vegetables are tender and slightly charred.
- Transfer smoked vegetables to a blender or food processor along with basil and blend until smooth.
- Pour blended mixture into a large saucepan. Add broth and simmer over medium heat for 15 minutes.
- Stir in heavy cream and adjust seasoning if necessary.
- Serve hot, garnished with fresh basil and croutons if desired.
Notes
- For a chunkier soup, blend only half of the tomatoes and leave the rest diced.
- Use Roma tomatoes for a thicker, richer soup.
- Adjust cream quantity to make the soup lighter or richer.
- Pairs beautifully with a grilled cheese sandwich.
