  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. Heat olive oil in a large Dutch oven or heavy pot over medium heat.
  2. Sauté onion, green pepper, red pepper, and garlic until softened, about 5 minutes.
  3. Stir in crushed tomatoes, diced tomatoes, tomato paste, and beef broth.
  4. Add chili powder, cumin, smoked paprika, black pepper, and salt. Stir to combine.
  5. Mix in the smoked pulled pork.
  6. Bring to a simmer, cover, and cook over low heat for 45 minutes to 1 hour, stirring occasionally.
