- 1 (14.5-ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt to taste
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- Heat olive oil in a large Dutch oven or heavy pot over medium heat.
- Sauté onion, green pepper, red pepper, and garlic until softened, about 5 minutes.
- Stir in crushed tomatoes, diced tomatoes, tomato paste, and beef broth.
- Add chili powder, cumin, smoked paprika, black pepper, and salt. Stir to combine.
- Mix in the smoked pulled pork.
- Bring to a simmer, cover, and cook over low heat for 45 minutes to 1 hour, stirring occasionally.
- Adjust seasoning as needed and serve hot with desired toppings.
Notes
- Use freshly smoked pulled pork for the best flavor, but leftovers work great too.
- Add beans if you prefer a heartier chili (though traditional pulled pork chili is often bean-free).
- For extra heat, add diced jalapeños or hot sauce.
