Smash Gyoza is a crispy and flavorful take on traditional dumplings where gyoza are smashed flat in a hot pan to maximize surface crispiness, then steamed and served with a savory dipping sauce.

- 20 gyoza (store-bought or homemade)
- 1 tablespoon vegetable oil
- 1/4 cup water
- Dipping Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili oil (optional)
- 1 teaspoon finely chopped green onion
- 1/2 teaspoon sugar
Instructions
- Heat vegetable oil in a large non-stick or cast iron skillet over medium-high heat.
- Add the gyoza flat side down in a single layer. Let them cook undisturbed for 2–3 minutes until bottoms are golden and crisp.
- Using a spatula or flat-bottomed glass, gently press down on each gyoza to flatten slightly (smash).
- Add the water to the skillet and immediately cover with a lid. Steam for 3–4 minutes, or until water has evaporated and gyoza are cooked through.
- Remove the lid and cook for another 1–2 minutes to re-crisp the bottoms.
- Meanwhile, mix all dipping sauce ingredients in a small bowl.
- Serve the smash gyoza hot with dipping sauce on the side.
Notes
- Don’t overcrowd the pan—cook in batches if needed to ensure crispiness.
- Smashing gently ensures the filling stays intact while maximizing crispy edges.
- Great as an appetizer, snack, or part of a larger meal.
