Description

Slow Cooker Sweet Potato Black Bean Chili is a hearty, nutritious, and flavorful plant-based meal featuring tender sweet potatoes, protein-rich black beans, and a smoky chili spice blend.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable broth
  • Juice of 1 lime
  • Optional: chopped cilantro and avocado for garnish

Instructions

  1. Add all ingredients except lime juice and optional garnishes to a slow cooker. Stir to combine.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until sweet potatoes are tender.
  3. Stir in lime juice before serving.
  4. Top with chopped cilantro and avocado if desired. Serve hot.

Notes

  • For extra heat, add a diced jalapeño or a pinch of cayenne pepper.
  • This chili thickens as it sits and is even better the next day.
  • Serve with cornbread or over rice for a heartier meal.
