- 2 medium sweet potatoes, peeled and diced
- 2 (15 oz) cans black beans, drained and rinsed
- 1 (15 oz) can diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups vegetable broth
- Juice of 1 lime
- Optional: chopped cilantro and avocado for garnish
Instructions
- Add all ingredients except lime juice and optional garnishes to a slow cooker. Stir to combine.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until sweet potatoes are tender.
- Stir in lime juice before serving.
- Top with chopped cilantro and avocado if desired. Serve hot.
Notes
- For extra heat, add a diced jalapeño or a pinch of cayenne pepper.
- This chili thickens as it sits and is even better the next day.
- Serve with cornbread or over rice for a heartier meal.
