Slow Cooker Sausage and Potato Casserole is a hearty, cheesy, and comforting meal that’s perfect for busy weeknights or lazy weekends. This easy one-pot dish combines savory sausage, tender potatoes, and a creamy cheese sauce, all slow-cooked to perfection!

- 1 lb smoked sausage or kielbasa, sliced into rounds
- 1 (32 oz) bag frozen diced hash browns (or 4 cups fresh potatoes, diced)
- 1 small onion, diced
- 1 1/2 cups shredded cheddar cheese
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- 1 cup milk
- 1/2 cup sour cream
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp dried parsley (optional, for garnish)
Instructions
1. Prep the Slow Cooker:
- Lightly grease the inside of a slow cooker with butter or nonstick spray.
2. Layer the Ingredients:
- Add potatoes, sliced sausage, and diced onion to the slow cooker.
- In a bowl, whisk together cream of mushroom soup, milk, sour cream, garlic powder, paprika, salt, and pepper.
- Pour the mixture over the potatoes and sausage.
- Stir everything together to coat evenly.
3. Cook Until Tender:
- Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours, until the potatoes are soft.
4. Add Cheese & Finish:
- Sprinkle shredded cheddar cheese over the top.
- Cover and cook for 15-20 more minutes, until the cheese is melted.
5. Serve & Enjoy!
- Garnish with parsley and serve warm!
