Description

Slow Cooker Sausage and Potato Casserole is a hearty, cheesy, and comforting meal that’s perfect for busy weeknights or lazy weekends. This easy one-pot dish combines savory sausage, tender potatoes, and a creamy cheese sauce, all slow-cooked to perfection!


Ingredients

  • 1 lb smoked sausage or kielbasa, sliced into rounds
  • 1 (32 oz) bag frozen diced hash browns (or 4 cups fresh potatoes, diced)
  • 1 small onion, diced
  • 1 1/2 cups shredded cheddar cheese
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp dried parsley (optional, for garnish)

Instructions

1. Prep the Slow Cooker:

  • Lightly grease the inside of a slow cooker with butter or nonstick spray.

2. Layer the Ingredients:

  • Add potatoes, sliced sausage, and diced onion to the slow cooker.
  • In a bowl, whisk together cream of mushroom soup, milk, sour cream, garlic powder, paprika, salt, and pepper.
  • Pour the mixture over the potatoes and sausage.
  • Stir everything together to coat evenly.

3. Cook Until Tender:

  • Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours, until the potatoes are soft.

4. Add Cheese & Finish:

  • Sprinkle shredded cheddar cheese over the top.
  • Cover and cook for 15-20 more minutes, until the cheese is melted.

5. Serve & Enjoy!

  • Garnish with parsley and serve warm!



Notes

Make It Spicier: Use spicy andouille sausage or add red pepper flakes.
Make It Creamier: Add ½ cup cream cheese for extra richness.
Storage: Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
