These Slow Cooker Potatoes are seasoned with garlic and herbs, then slow-cooked to perfection for a tender and flavorful side dish. They’re easy to make, hands-free, and go well with any main course.

Ingredients

Scale
  • 3 lbs baby potatoes (yellow, red, or fingerling)
  • 4 tablespoons olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Prepare the Potatoes:

    • Wash and dry the baby potatoes, trimming any sprouts if necessary. If using larger potatoes, cut them into evenly-sized pieces.
  2. Season the Potatoes:

    • In a large mixing bowl, toss the potatoes with olive oil, garlic, Italian seasoning, salt, and black pepper until evenly coated.
  3. Add to Slow Cooker:

    • Transfer the seasoned potatoes to the slow cooker. For the best results, arrange them in a single layer or avoid overcrowding.
  4. Cook:

    • Cover and cook on HIGH for 2-3 hours or on LOW for 4-5 hours, until the potatoes are tender when pierced with a fork.
  5. Serve:

    • Garnish with fresh parsley or chives before serving. Enjoy hot with your favorite main dish!

Notes

  • For Crispier Potatoes: After cooking, place the potatoes on a baking sheet and broil in the oven for 5-10 minutes for a golden, crispy finish.
  • Variations: Add a sprinkle of Parmesan cheese before serving, or use rosemary and thyme for different flavors.
