Ingredients

Units Scale

(Serves 4-6)

  • 46 bone-in or boneless pork chops (about 1-inch thick)
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Pork Chops:

  1. Season the pork chops on both sides with salt, pepper, and paprika.
  2. Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side, until golden brown. Transfer to the slow cooker.

2. Make the Garlic Parmesan Sauce:

  1. In the same skillet, lower the heat and add the minced garlic. Sauté for 1 minute until fragrant.
  2. Add the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  3. Stir in the Parmesan cheese and Italian seasoning. Continue stirring until the cheese melts and the sauce is smooth.

3. Slow Cook:

  1. Pour the garlic Parmesan sauce over the pork chops in the slow cooker.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the pork chops are tender.

4. Thicken the Sauce (Optional):

  1. If the sauce is thinner than desired, stir in the cornstarch mixture during the last 30 minutes of cooking. Let it thicken while still in the slow cooker.

5. Serve:

  1. Garnish with freshly chopped parsley.
  2. Serve the pork chops with the creamy sauce over mashed potatoes, rice, or pasta.

Notes

  • For Extra Flavor: Add mushrooms or spinach to the slow cooker for a veggie-packed version.
  • Cheese Options: Substitute Parmesan with Asiago or Pecorino Romano for a different cheesy twist.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or microwave.
