Scale
(Serves 4-6)
- 4–6 bone-in or boneless pork chops (about 1-inch thick)
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Pork Chops:
- Season the pork chops on both sides with salt, pepper, and paprika.
- Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side, until golden brown. Transfer to the slow cooker.
2. Make the Garlic Parmesan Sauce:
- In the same skillet, lower the heat and add the minced garlic. Sauté for 1 minute until fragrant.
- Add the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Stir in the Parmesan cheese and Italian seasoning. Continue stirring until the cheese melts and the sauce is smooth.
3. Slow Cook:
- Pour the garlic Parmesan sauce over the pork chops in the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the pork chops are tender.
4. Thicken the Sauce (Optional):
- If the sauce is thinner than desired, stir in the cornstarch mixture during the last 30 minutes of cooking. Let it thicken while still in the slow cooker.
5. Serve:
- Garnish with freshly chopped parsley.
- Serve the pork chops with the creamy sauce over mashed potatoes, rice, or pasta.
Notes
- For Extra Flavor: Add mushrooms or spinach to the slow cooker for a veggie-packed version.
- Cheese Options: Substitute Parmesan with Asiago or Pecorino Romano for a different cheesy twist.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or microwave.
