- 2 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp crushed red pepper flakes (optional, for spice)
- 1/4 cup chopped peanuts (for garnish)
- 2 green onions, chopped (for garnish)
- Fresh cilantro, chopped (for garnish)
Instructions
- Prepare the Sauce: In a medium bowl, whisk together peanut butter, soy sauce, coconut milk, rice vinegar, honey, minced garlic, grated ginger, and crushed red pepper flakes until smooth.
- Add to Slow Cooker: Place the chicken thighs (or breasts) in the slow cooker and pour the peanut sauce over the top, ensuring all pieces are coated.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
- Shred and Stir: Once cooked, use two forks to shred the chicken in the slow cooker. Stir to fully incorporate the sauce.
- Garnish and Serve: Serve over rice or noodles, garnished with chopped peanuts, green onions, and fresh cilantro.
Notes
- For added texture, add sliced bell peppers, carrots, or snap peas to the slow cooker in the last hour of cooking.
- Adjust the spice level by adding more or less red pepper flakes.
- The sauce can be thickened by leaving the lid off the slow cooker for the last 15 minutes of cooking.
