Slow Cooker Peanut Chicken is a delicious, easy-to-make dish that features tender, juicy chicken simmered in a creamy, rich peanut sauce. With hints of garlic, soy, and a touch of spice, this dish pairs wonderfully with rice or noodles and is great for busy weeknights!

  • 1 ½ lbs boneless, skinless chicken thighs (or chicken breasts)
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce (low-sodium)
  • 1/4 cup coconut milk (or chicken broth)
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp crushed red pepper flakes (optional, for spice)
  • 1/4 cup chopped peanuts (for garnish)
  • 2 green onions, chopped (for garnish)
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Prepare the Sauce: In a medium bowl, whisk together peanut butter, soy sauce, coconut milk, rice vinegar, honey, minced garlic, grated ginger, and crushed red pepper flakes until smooth.
  • Add to Slow Cooker: Place the chicken thighs (or breasts) in the slow cooker and pour the peanut sauce over the top, ensuring all pieces are coated.
  • Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  • Shred and Stir: Once cooked, use two forks to shred the chicken in the slow cooker. Stir to fully incorporate the sauce.
  • Garnish and Serve: Serve over rice or noodles, garnished with chopped peanuts, green onions, and fresh cilantro.

Notes

  • For added texture, add sliced bell peppers, carrots, or snap peas to the slow cooker in the last hour of cooking.
  • Adjust the spice level by adding more or less red pepper flakes.
  • The sauce can be thickened by leaving the lid off the slow cooker for the last 15 minutes of cooking.
