Ingredients

Units Scale

For the Chicken:

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika

For the Peach BBQ Sauce:

  • 1 1/2 cups peach preserves (or fresh peaches, blended)
  • 1 cup BBQ sauce (homemade or store-bought)
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes (optional, for spice)

Instructions

Step 1: Season the Chicken

  1. Place the chicken breasts in the slow cooker.
  2. Sprinkle with salt, pepper, garlic powder, and smoked paprika.

Step 2: Make the Peach BBQ Sauce

  1. In a bowl, whisk together peach preserves, BBQ sauce, apple cider vinegar, Dijon mustard, Worcestershire sauce, garlic powder, and red pepper flakes.

Step 3: Slow Cook

  1. Pour the peach BBQ sauce over the chicken.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and shreds easily.

Step 4: Shred & Serve

  1. Remove the chicken and shred it with two forks.
  2. Stir the shredded chicken back into the sauce.
  3. Serve over rice, in sandwiches, or with roasted vegetables.

Notes

  • Use Fresh Peaches: Blend 2 fresh peaches instead of preserves for a natural sweetness.
  • Make It Spicy: Add ½ tsp cayenne pepper or a dash of hot sauce.
  • Storage: Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
  • Serving Ideas: Try it over coleslaw, mashed potatoes, or in tacos!
