- 4 boneless, skinless chicken breasts
- 1/2 cup chicken broth
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Place the chicken in the bottom of the slow cooker.
- In a bowl, mix together chicken broth, lemon juice, lemon zest, garlic, oregano, thyme, and olive oil.
- Pour the mixture over the chicken.
- Top with lemon slices.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
- Garnish with chopped fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken in the lemon mixture for 30 minutes before cooking.
- Serve with rice, quinoa, or steamed vegetables.
- Leftovers can be shredded and added to salads or wraps.
