Description

Tender slow cooker lemon chicken with fresh herbs and garlic, cooked to juicy perfection with a bright citrus flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Place the chicken in the bottom of the slow cooker.
  3. In a bowl, mix together chicken broth, lemon juice, lemon zest, garlic, oregano, thyme, and olive oil.
  4. Pour the mixture over the chicken.
  5. Top with lemon slices.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  7. Garnish with chopped fresh parsley before serving.

Notes

  • For extra flavor, marinate the chicken in the lemon mixture for 30 minutes before cooking.
  • Serve with rice, quinoa, or steamed vegetables.
  • Leftovers can be shredded and added to salads or wraps.
