Slow Cooker Honey Garlic Chicken and Veggies is an easy, wholesome, and flavorful meal made with tender chicken, baby potatoes, carrots, and green beans, all coated in a sweet and savory honey garlic sauce.

- 4 boneless, skinless chicken breasts or thighs
- 1 lb baby potatoes, halved
- 2 cups baby carrots
- 1 cup green beans, trimmed
- 1/2 cup honey
- 1/2 cup soy sauce (low sodium preferred)
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken in the bottom of the slow cooker. Add potatoes and carrots around the chicken.
- In a small bowl, whisk together honey, soy sauce, ketchup, garlic, basil, and black pepper.
- Pour the sauce evenly over the chicken and vegetables.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender.
- In the last 30 minutes, add the green beans on top.
- If desired, mix cornstarch with water and stir into the sauce to thicken during the last 15-20 minutes of cooking.
- Garnish with chopped parsley before serving.
Notes
- Chicken thighs stay more tender in the slow cooker than breasts.
- Adjust honey and soy sauce to taste for a sweeter or saltier sauce.
- Can add onion or bell pepper for extra flavor.
- Leftovers store well in the refrigerator for up to 3 days.
