Description

Slow Cooker Fajita Salsa Chicken is a simple, flavorful dish made with just a handful of ingredients. Juicy chicken slow-cooked with salsa, fajita seasoning, and colorful bell peppers makes the perfect filling for tacos, burrito bowls, salads, or wraps. It’s easy, customizable, and great for meal prep!

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs

  • 1 (16 oz) jar of your favorite salsa (chunky or smooth)

  • 1 packet fajita seasoning (or 2 tbsp homemade fajita mix)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow onion, sliced

  • 1 tbsp olive oil (optional, for richer flavor)

  • Juice of 1 lime

  • Optional: chopped cilantro, shredded cheese, sour cream, avocado for serving

Instructions

  1. Place chicken in the bottom of the slow cooker.

  2. Sprinkle fajita seasoning over the chicken.

  3. Add sliced bell peppers and onion on top.

  4. Pour the salsa and lime juice over everything. Drizzle with olive oil if using.

  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.

  6. Shred chicken with two forks and stir everything together in the sauce.

  7. Serve in tacos, over rice or cauliflower rice, or with a side of chips and guac.

Notes

  • Use any salsa you like—chunky, spicy, or even pineapple salsa for a twist.

  • Want extra heat? Add a diced jalapeño or a few dashes of hot sauce before cooking.

  • This recipe freezes well—great for make-ahead meals!
