Description
This Slow Cooker Coca-Cola Chicken is a Southern-inspired dish where tender chicken is slow-cooked in a sweet and savory sauce made with Coca-Cola, barbecue sauce, and spices. It’s an easy, flavorful meal perfect for busy weeknights! Serve it over rice, mashed potatoes, or on a sandwich bun.
Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 (12-ounce) can Coca-Cola (not diet)
- 1 cup barbecue sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
-
Prepare the slow cooker – Lightly grease the inside of your slow cooker with nonstick spray.
-
Add the chicken – Place the chicken breasts or thighs in the slow cooker.
-
Mix the sauce – In a bowl, whisk together Coca-Cola, barbecue sauce, Worcestershire sauce, soy sauce, garlic powder, onion powder, paprika, salt, and pepper.
-
Cook low & slow – Pour the sauce over the chicken. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and easily shreds.
-
Shred & serve – Shred the chicken directly in the slow cooker using two forks, then stir to coat in the sauce. Serve over rice, on a sandwich bun, or with mashed potatoes.
Notes
- For a thicker sauce: After shredding, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the sauce. Let cook for 10 more minutes until thickened.
- Use chicken thighs: They stay juicier than chicken breasts.
- Want it spicy? Add ½ teaspoon red pepper flakes or a few dashes of hot sauce.
- Prefer crispy chicken? After slow cooking, transfer shredded chicken to a baking sheet and broil for 5 minutes for crispy edges.
