Description

Slow Cooker Chicken with Cherry Tomatoes & Basil is a simple, wholesome recipe that’s full of fresh flavor. Juicy chicken is slow-cooked with sweet cherry tomatoes, garlic, and herbs, then finished with fresh basil for a bright and delicious meal. Serve it over pasta, rice, or with crusty bread for a cozy, satisfying dinner.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs

  • 3 cups cherry tomatoes (whole or halved)

  • 4 cloves garlic, minced

  • 1 small yellow onion, thinly sliced

  • 1/4 cup chicken broth or white wine

  • 1 tbsp olive oil

  • 1/2 tsp dried oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp red pepper flakes (optional)

  • 1/4 cup fresh basil, chopped (plus more for garnish)

  • Optional: Grated Parmesan for serving

 



Instructions

  1. Place chicken in the bottom of the slow cooker.

  2. Top with cherry tomatoes, garlic, onion, oregano, salt, pepper, and red pepper flakes.

  3. Drizzle with olive oil and pour chicken broth (or white wine) over everything.

  4. Cover and cook on low for 5–6 hours or high for 2.5–3.5 hours, until chicken is tender.

  5. Stir in fresh basil just before serving.

  6. Serve over pasta, rice, or with toasted bread, and sprinkle with Parmesan if desired.


Notes

  • Chicken thighs will be more tender, but breasts work just as well.

  • For a creamier version, stir in 1–2 tablespoons of cream cheese or a splash of heavy cream at the end.

  • Add spinach in the last 10 minutes of cooking for extra veggies.
