- 2 large boneless, skinless chicken breasts (or 4 small)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream (or Greek yogurt)
- 1/2 cup chicken broth
- 1 (6 oz) box stuffing mix (such as Stove Top)
- 1 teaspoon dried parsley (optional)
- 1 cup frozen mixed vegetables (optional)
- 2 tablespoons unsalted butter, melted
Instructions
- Prepare the slow cooker – Lightly grease the crockpot with cooking spray.
- Season the chicken – Place chicken in the slow cooker and season with salt, pepper, garlic powder, and onion powder.
- Mix the sauce – In a bowl, mix cream of chicken soup, sour cream, and chicken broth. Pour over the chicken.
- Add the stuffing – Sprinkle dry stuffing mix over the top, then drizzle melted butter evenly over the stuffing.
- Slow cook – Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and reaches 165°F (75°C) internally.
- Stir & serve – If adding mixed vegetables, stir them in during the last 30 minutes of cooking. Shred the chicken slightly and mix with the stuffing before serving.
