This slow-cooked soup captures the savory, cheesy flavor of a burger, simmered to perfection with tender potatoes, ground beef, and melty cheddar. Perfect for an easy, crowd-pleasing dinner, it combines comfort food favorites with the simplicity of a slow cooker.


Ingredients

  • 1 1/2 pounds lean ground beef
  • 1/2 white onion, diced
  • 2 tsp minced garlic
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp Worcestershire sauce
  • 2 tbsp yellow mustard
  • 2 tbsp pickle relish (optional)
  • 3 cups beef broth
  • 8 oz frozen Southern-style hash browns
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 8 oz cooked and crumbled bacon
  • Salt and pepper, to taste

Instructions

  • Prepare Beef and Vegetables: In a large skillet, brown the ground beef over medium heat. Drain excess fat and add onions and garlic, cooking until onions are soft.
  • Combine Ingredients: Transfer the beef mixture to a slow cooker. Add tomatoes with juice, Worcestershire sauce, mustard, relish (if using), beef broth, and hash browns. Season with salt and pepper, stirring well.
  • Slow Cook: Cover and cook on low for 6 hours or on high for 3 hours, until potatoes are tender.
  • Add Cheese and Cream: Stir in cheddar cheese and heavy cream. Cover and cook on high for an additional hour until cheese melts and soup thickens.
  • Serve: Stir in crumbled bacon just before serving. Enjoy with crusty bread or crackers.

Notes

  • For a bacon cheeseburger twist, add additional crumbled bacon.
