- 1 1/2 pounds lean ground beef
- 1/2 white onion, diced
- 2 tsp minced garlic
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tbsp Worcestershire sauce
- 2 tbsp yellow mustard
- 2 tbsp pickle relish (optional)
- 3 cups beef broth
- 8 oz frozen Southern-style hash browns
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 8 oz cooked and crumbled bacon
- Salt and pepper, to taste
Instructions
- Prepare Beef and Vegetables: In a large skillet, brown the ground beef over medium heat. Drain excess fat and add onions and garlic, cooking until onions are soft.
- Combine Ingredients: Transfer the beef mixture to a slow cooker. Add tomatoes with juice, Worcestershire sauce, mustard, relish (if using), beef broth, and hash browns. Season with salt and pepper, stirring well.
- Slow Cook: Cover and cook on low for 6 hours or on high for 3 hours, until potatoes are tender.
- Add Cheese and Cream: Stir in cheddar cheese and heavy cream. Cover and cook on high for an additional hour until cheese melts and soup thickens.
- Serve: Stir in crumbled bacon just before serving. Enjoy with crusty bread or crackers.
