Description

This slow cooker chicken recipe combines savory bacon, sweet brown sugar, and aromatic garlic for a dish that’s irresistibly juicy and flavorful. With minimal prep and the ease of a slow cooker, this dish is perfect for busy weeknights or when you want a fuss-free, delicious dinner!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 kg)
  • 6 slices of bacon
  • 100 g (1/2 cup) brown sugar, packed
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon soy sauce (optional, for depth of flavor)
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening the sauce)
  • Chopped fresh parsley (for garnish)

Instructions

🍳 Preparation:

  1. Prepare the Chicken:

    • Season chicken breasts with salt, pepper, and smoked paprika.
  2. Wrap with Bacon:

    • Wrap each chicken breast with 1-2 slices of bacon, securing with toothpicks if needed.
  3. Mix Sauce Ingredients:

    • In a small bowl, combine brown sugar, minced garlic, olive oil, soy sauce, and thyme.
    • Stir well to create a paste-like mixture.

🍲 Slow Cooker Method:

  1. Layer in Slow Cooker:

    • Place the bacon-wrapped chicken in the slow cooker.
    • Pour the brown sugar and garlic mixture evenly over the chicken.
  2. Cook:

    • Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken reaches an internal temperature of 75°C (165°F).
  3. Thicken the Sauce (Optional):

    • If the sauce is too thin, mix cornstarch with water to form a slurry.
    • Stir into the slow cooker and let cook for an additional 10-15 minutes until the sauce thickens.

🔥 Optional Crisping Step:

  1. Broil for Extra Crispiness:
    • Preheat your oven broiler.
    • Transfer chicken to a baking sheet and spoon some sauce over the top.
    • Broil for 3-5 minutes until the bacon is crispy.

🍽️ Serving Suggestions:

  • Serve with mashed potatoes, rice, or roasted vegetables.
  • Spoon the extra sauce over the chicken for added flavor.

Notes

  • For a spicy twist, add a pinch of red pepper flakes to the sauce.
  • You can substitute chicken breasts with boneless chicken thighs for a juicier result.
