- 1 lb ground beef
- 1 small onion (diced)
- 1/2 green bell pepper (diced)
- 1 cup sloppy joe sauce (store-bought or homemade, see note)
- 1 cup shredded cheddar cheese
- 1 cup cooked rice (optional)

- 4 large flour tortillas
- 1 tbsp butter or oil (for grilling)

Make the Filling:

- In a skillet over medium heat, cook the ground beef until browned, breaking it into crumbles. Drain excess grease.

- Add the onion and bell pepper to the skillet. Cook for 3-4 minutes until softened.

- Stir in the sloppy joe sauce and let the mixture simmer for 5 minutes until slightly thickened. Remove from heat.

- Place a tortilla on a flat surface. Spread a portion of the sloppy joe mixture in the center. Add a layer of shredded cheese and, if desired, a scoop of cooked rice.

- Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

Notes
- Homemade Sloppy Joe Sauce: Mix 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp mustard, 1 tsp Worcestershire sauce, and 1/4 tsp chili powder. Adjust seasoning to taste.
