Description

These burritos are packed with the savory, tangy flavors of sloppy joes, then grilled for a crispy exterior. They’re perfect for a family dinner or a quick lunch.

Ingredients

Units Scale

For the Filling:

  • 1 lb ground beef
  • 1 small onion (diced)
  • 1/2 green bell pepper (diced)
  • 1 cup sloppy joe sauce (store-bought or homemade, see note)
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice (optional)

For the Burritos:

  • 4 large flour tortillas
  • 1 tbsp butter or oil (for grilling)

Instructions

Make the Filling:

  1. Cook the Beef:

    • In a skillet over medium heat, cook the ground beef until browned, breaking it into crumbles. Drain excess grease.
  2. Add Vegetables:

    • Add the onion and bell pepper to the skillet. Cook for 3-4 minutes until softened.
  3. Add Sloppy Joe Sauce:

    • Stir in the sloppy joe sauce and let the mixture simmer for 5 minutes until slightly thickened. Remove from heat.

Assemble the Burritos:

  1. Layer the Ingredients:

    • Place a tortilla on a flat surface. Spread a portion of the sloppy joe mixture in the center. Add a layer of shredded cheese and, if desired, a scoop of cooked rice.
  2. Roll the Burrito:

    • Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

Grill the Burritos:

  1. Heat a Skillet:

    • Melt butter or heat oil in a skillet over medium heat.
  2. Grill the Burritos:

    • Place the burritos seam-side down in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy.

Serve:

  1. Slice and Serve:
    • Slice the burritos in half and serve hot with a side of sour cream, salsa, or guacamole.

Notes

  • Homemade Sloppy Joe Sauce: Mix 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp mustard, 1 tsp Worcestershire sauce, and 1/4 tsp chili powder. Adjust seasoning to taste.
  • These burritos can be made ahead and grilled just before serving.
