Description

Sloppy Joe Cornbread Casserole is a hearty and comforting dish that combines the sweet and tangy flavors of sloppy joes with a golden, fluffy layer of cornbread baked on top.


Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 (8.5 oz) box cornbread mix
  • 1/3 cup milk (for cornbread)
  • 1 large egg (for cornbread)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a skillet over medium heat, cook ground beef, onion, bell pepper, and garlic until the meat is browned and vegetables are soft. Drain excess fat.
  3. Stir in ketchup, brown sugar, mustard, Worcestershire sauce, salt, and pepper. Simmer for 5 minutes to thicken slightly.
  4. Spread the sloppy joe mixture evenly in the prepared baking dish.
  5. In a separate bowl, prepare the cornbread mix according to package instructions using milk and egg. Stir in cheddar cheese if using.
  6. Pour the cornbread batter over the meat mixture and spread evenly.
  7. Bake for 25–30 minutes, or until the cornbread is golden and cooked through.
  8. Let cool for a few minutes before serving.
