- 1 lb ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 2 cloves garlic, minced
- 1 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
- 1 (8.5 oz) box cornbread mix
- 1/3 cup milk (for cornbread)
- 1 large egg (for cornbread)
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
- In a skillet over medium heat, cook ground beef, onion, bell pepper, and garlic until the meat is browned and vegetables are soft. Drain excess fat.
- Stir in ketchup, brown sugar, mustard, Worcestershire sauce, salt, and pepper. Simmer for 5 minutes to thicken slightly.
- Spread the sloppy joe mixture evenly in the prepared baking dish.
- In a separate bowl, prepare the cornbread mix according to package instructions using milk and egg. Stir in cheddar cheese if using.
- Pour the cornbread batter over the meat mixture and spread evenly.
- Bake for 25–30 minutes, or until the cornbread is golden and cooked through.
- Let cool for a few minutes before serving.

- Use ground turkey or chicken as a lighter option.
- Add a pinch of chili powder or hot sauce to the sloppy joe mix for a spicy kick.
