- 1 lb shrimp, peeled and deveined
- 3 cups cooked and chilled rice (preferably day-old)
- 2 tbsp vegetable oil, divided
- 2 eggs, beaten
- 1 cup frozen peas and carrots, thawed
- 1/2 cup chopped green onions
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- Salt and black pepper to taste
Instructions
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2–3 minutes per side, or until pink and opaque. Remove and set aside.
- In the same pan, scramble the beaten eggs until just cooked. Remove and set aside.
- Add the remaining oil to the skillet. Sauté garlic for 30 seconds, then add peas and carrots and cook for 2 minutes.
- Add the chilled rice, breaking up clumps with a spatula. Stir-fry for 3–4 minutes until heated through.
- Stir in soy sauce, oyster sauce (if using), and sesame oil. Add cooked shrimp, scrambled eggs, and green onions. Mix everything until well combined.
- Season with salt and pepper to taste. Serve hot.

- Use cold, day-old rice for best texture and separation.
- Customize with extra vegetables or a splash of chili sauce for heat.
- Substitute with chicken or tofu for variation.
