Description

Shrimp Fried Rice is a quick and flavorful dish made with succulent shrimp, vegetables, scrambled eggs, and rice stir-fried with savory seasonings—perfect for a weeknight dinner or meal prep.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 cups cooked and chilled rice (preferably day-old)
  • 2 tbsp vegetable oil, divided
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 1/2 cup chopped green onions
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Salt and black pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2–3 minutes per side, or until pink and opaque. Remove and set aside.
  2. In the same pan, scramble the beaten eggs until just cooked. Remove and set aside.
  3. Add the remaining oil to the skillet. Sauté garlic for 30 seconds, then add peas and carrots and cook for 2 minutes.
  4. Add the chilled rice, breaking up clumps with a spatula. Stir-fry for 3–4 minutes until heated through.
  5. Stir in soy sauce, oyster sauce (if using), and sesame oil. Add cooked shrimp, scrambled eggs, and green onions. Mix everything until well combined.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • Use cold, day-old rice for best texture and separation.
  • Customize with extra vegetables or a splash of chili sauce for heat.
  • Substitute with chicken or tofu for variation.
