Description

For the Shrimp Marinade:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime

For the Vegetables:

  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced

For Serving:

  • Warm flour or corn tortillas
  • Optional toppings: guacamole, sour cream, salsa, shredded cheese, chopped cilantro, lime wedges

Instructions

1. Marinate the Shrimp:

  1. In a large bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, black pepper, and lime juice.
  2. Add the shrimp to the bowl and toss to coat evenly. Cover and refrigerate for 15-20 minutes while preparing the vegetables.

2. Cook the Vegetables:

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  2. Add the bell peppers, onion, and garlic. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp and slightly charred. Remove from the skillet and set aside.

3. Cook the Shrimp:

  1. In the same skillet, heat the remaining 1 tbsp olive oil over medium-high heat.
  2. Add the marinated shrimp in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink, opaque, and cooked through.

4. Combine and Serve:

  1. Return the cooked vegetables to the skillet with the shrimp. Toss to combine and heat through for 1-2 minutes.
  2. Serve the shrimp and vegetables in warm tortillas with your favorite toppings.



Notes

  • Make It Spicy: Add 1/4 tsp cayenne pepper or red pepper flakes to the marinade for extra heat.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
