For the Shrimp Marinade:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
For the Vegetables:
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 garlic cloves, minced
For Serving:
- Warm flour or corn tortillas
- Optional toppings: guacamole, sour cream, salsa, shredded cheese, chopped cilantro, lime wedges
Instructions
1. Marinate the Shrimp:
- In a large bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, black pepper, and lime juice.
- Add the shrimp to the bowl and toss to coat evenly. Cover and refrigerate for 15-20 minutes while preparing the vegetables.
2. Cook the Vegetables:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add the bell peppers, onion, and garlic. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp and slightly charred. Remove from the skillet and set aside.
3. Cook the Shrimp:
- In the same skillet, heat the remaining 1 tbsp olive oil over medium-high heat.
- Add the marinated shrimp in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink, opaque, and cooked through.
4. Combine and Serve:
- Return the cooked vegetables to the skillet with the shrimp. Toss to combine and heat through for 1-2 minutes.
- Serve the shrimp and vegetables in warm tortillas with your favorite toppings.

- Make It Spicy: Add 1/4 tsp cayenne pepper or red pepper flakes to the marinade for extra heat.
