Description

Shrimp Fajita Pasta Salad is a bold and zesty dish that combines juicy shrimp, tender pasta, colorful sautéed peppers, and a flavorful fajita-seasoned dressing, perfect for a hearty side or light meal.


Ingredients

  • 12 oz rotini or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1/4 cup chopped cilantro
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large skillet, heat olive oil over medium-high heat. Toss shrimp with 1 tbsp fajita seasoning and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
  3. In the same skillet, sauté peppers and red onion with the remaining fajita seasoning until tender-crisp. Let cool.
  4. In a large bowl, whisk together sour cream, mayonnaise, lime juice, salt, and pepper to make the dressing.
  5. Add cooked pasta, shrimp, and sautéed vegetables to the bowl and toss to coat with dressing.
  6. Stir in chopped cilantro and adjust seasoning as needed.
  7. Refrigerate for at least 30 minutes before serving for best flavor.

Notes

  • Use grilled shrimp for extra smoky flavor if desired.
  • Adjust fajita seasoning to make it milder or spicier according to your taste.
  • For a lighter version, use Greek yogurt instead of sour cream and mayonnaise.
