- 12 oz rotini or penne pasta
- 1 lb shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1/4 cup chopped cilantro
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
- In a large skillet, heat olive oil over medium-high heat. Toss shrimp with 1 tbsp fajita seasoning and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, sauté peppers and red onion with the remaining fajita seasoning until tender-crisp. Let cool.
- In a large bowl, whisk together sour cream, mayonnaise, lime juice, salt, and pepper to make the dressing.
- Add cooked pasta, shrimp, and sautéed vegetables to the bowl and toss to coat with dressing.
- Stir in chopped cilantro and adjust seasoning as needed.
- Refrigerate for at least 30 minutes before serving for best flavor.

- Use grilled shrimp for extra smoky flavor if desired.
- Adjust fajita seasoning to make it milder or spicier according to your taste.
- For a lighter version, use Greek yogurt instead of sour cream and mayonnaise.
