- 1 lb shrimp, peeled and deveined
- 2 cups cooked rice or pasta
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup bell pepper, chopped
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup breadcrumbs (optional)
- Chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and bell pepper until softened, about 5 minutes.
- Add shrimp and cook until just pink, 2–3 minutes. Remove from heat.
- In a large bowl, combine cooked rice or pasta, shrimp mixture, cream of mushroom soup, sour cream, cheddar cheese, paprika, salt, and pepper. Mix well.
- Transfer mixture to the prepared baking dish and spread evenly. Sprinkle with Parmesan and breadcrumbs if using.
- Bake uncovered for 20–25 minutes or until bubbly and golden on top.
- Garnish with chopped parsley and serve hot.
Notes
- Substitute cream of mushroom soup with cream of celery or homemade white sauce if desired.
- Add frozen peas or spinach for extra veggies.
- Use pre-cooked shrimp to save time—just stir in at step 4 without additional cooking.
