Description

Shrimp casserole is a comforting and hearty baked dish filled with succulent shrimp, creamy sauce, and tender rice or pasta, topped with a golden, cheesy crust.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice or pasta
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup bell pepper, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and bell pepper until softened, about 5 minutes.
  3. Add shrimp and cook until just pink, 2–3 minutes. Remove from heat.
  4. In a large bowl, combine cooked rice or pasta, shrimp mixture, cream of mushroom soup, sour cream, cheddar cheese, paprika, salt, and pepper. Mix well.
  5. Transfer mixture to the prepared baking dish and spread evenly. Sprinkle with Parmesan and breadcrumbs if using.
  6. Bake uncovered for 20–25 minutes or until bubbly and golden on top.
  7. Garnish with chopped parsley and serve hot.

Notes

  • Substitute cream of mushroom soup with cream of celery or homemade white sauce if desired.
  • Add frozen peas or spinach for extra veggies.
  • Use pre-cooked shrimp to save time—just stir in at step 4 without additional cooking.
