For the shimmering sugar topping:

  • 1/4 cup (50 g) coarse or sparkling sugar
  • 1/4 teaspoon ground cinnamon (optional)



Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Cream the butter and sugar:
    • In a large bowl, beat the softened butter and sugar together using a hand or stand mixer on medium speed until light and fluffy, about 2-3 minutes.
  3. Add wet ingredients:
    • Mix in the maple syrup, egg, and vanilla extract, beating until well combined.
  4. Combine the dry ingredients:
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms.
  5. Shape the cookies:
    • Scoop tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
    • Flatten each ball slightly with the bottom of a glass.
  6. Add the shimmering sugar topping:
    • Mix the coarse sugar and cinnamon (if using) in a small bowl. Sprinkle a generous pinch of the mixture over each cookie.
  7. Bake the cookies:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly soft but will firm up as they cool.
