For the cookies:
- 1 cup (230 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 1/4 cup (60 ml) pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups (315 g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the shimmering sugar topping:
- 1/4 cup (50 g) coarse or sparkling sugar
- 1/4 teaspoon ground cinnamon (optional)
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Cream the butter and sugar:
- In a large bowl, beat the softened butter and sugar together using a hand or stand mixer on medium speed until light and fluffy, about 2-3 minutes.
- Add wet ingredients:
- Mix in the maple syrup, egg, and vanilla extract, beating until well combined.
- Combine the dry ingredients:
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms.
- Shape the cookies:
- Scoop tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
- Flatten each ball slightly with the bottom of a glass.
- Add the shimmering sugar topping:
- Mix the coarse sugar and cinnamon (if using) in a small bowl. Sprinkle a generous pinch of the mixture over each cookie.
- Bake the cookies:
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly soft but will firm up as they cool.
- Cool and serve:
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
