- 1 packet taco seasoning (or homemade, ~1 tablespoon)
- 1/2 cup (120 ml) water
- 2 cups (200 g) shredded cheddar or Mexican-blend cheese
- 1/2 cup (120 g) canned black beans, rinsed and drained (optional)
- 1/2 cup (75 g) corn (optional)
Optional toppings:
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup sliced black olives
- 1 jalapeño, sliced
- 1/4 cup chopped cilantro
- Sour cream
- Guacamole or diced avocado
- Salsa or pico de gallo
Instructions
- Preheat the oven:
- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
- Cook the meat:
- Heat a skillet over medium heat. Add the ground beef or turkey and cook until browned and crumbled. Drain any excess fat.
- Stir in the taco seasoning and water. Simmer for 3–5 minutes until the mixture thickens.
- Assemble the nachos:
- Spread the tortilla chips evenly across the prepared sheet pan.
- Sprinkle half of the cheese over the chips.
- Evenly distribute the cooked meat, black beans, corn, and any other toppings that can be baked (like jalapeños or olives).
- Sprinkle the remaining cheese over the top.
- Bake:
- Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.
- Add fresh toppings:
- Remove the nachos from the oven and top with fresh ingredients like diced tomatoes, red onion, cilantro, and avocado. Add dollops of sour cream, guacamole, or salsa as desired.
- Serve immediately:
- Place the sheet pan on the table and let everyone dig in.
Notes
- For extra spice, sprinkle the nachos with red pepper flakes or drizzle with hot sauce.
- Use rotisserie chicken or shredded pork instead of ground meat for variety.
- Store leftovers in an airtight container, but note that nachos are best enjoyed fresh to maintain crispness.
