For the Crust:
- 25 chocolate sandwich cookies (like Oreos), crushed
- 5 tablespoons unsalted butter, melted
For the Filling:
- 1 (8-ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon mint extract
- 1 1/2 cups heavy whipping cream
- 4–5 drops green food coloring
- 1/2 cup white chocolate chips, melted
For Garnish (Optional):
- Whipped cream
- Chocolate shavings
- Green sprinkles
Instructions
- Prepare the Crust:
- In a bowl, mix crushed cookies and melted butter until combined.
- Press the mixture firmly into a 9-inch pie pan. Refrigerate for at least 30 minutes.
- Make the Filling:
- In a large bowl, beat cream cheese, powdered sugar, vanilla, and mint extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
- Create the Swirl Effect:
- Remove ½ cup of the filling and mix it with green food coloring.
- Pour the white filling into the prepared crust, then dollop spoonfuls of the green mixture on top.
- Use a toothpick or knife to swirl the colors together.
- Chill & Serve:
- Drizzle melted white chocolate over the top (optional).
- Refrigerate for at least 4 hours, or until set.
- Garnish with whipped cream, chocolate shavings, or sprinkles before serving.
Notes
- For a stronger mint flavor, add an extra ¼ teaspoon of mint extract.
- Swap the chocolate cookie crust for a graham cracker crust for a lighter flavor.
- This pie can be made up to 2 days in advance and stored in the fridge.
