Description

A no-bake, creamy mint pie with a beautiful green swirl, perfect for celebrating St. Patrick’s Day! This refreshing dessert has a crunchy cookie crust, a smooth vanilla-mint filling, and a fun marbled effect.

  • 25 chocolate sandwich cookies (like Oreos), crushed
  • 5 tablespoons unsalted butter, melted
For the Filling:
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon mint extract
  • 1 1/2 cups heavy whipping cream
  • 45 drops green food coloring
  • 1/2 cup white chocolate chips, melted
For Garnish (Optional):
  • Whipped cream
  • Chocolate shavings
  • Green sprinkles

Instructions

  • Prepare the Crust:
    • In a bowl, mix crushed cookies and melted butter until combined.
    • Press the mixture firmly into a 9-inch pie pan. Refrigerate for at least 30 minutes.
  • Make the Filling:
    • In a large bowl, beat cream cheese, powdered sugar, vanilla, and mint extract until smooth.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
  • Create the Swirl Effect:
    • Remove ½ cup of the filling and mix it with green food coloring.
    • Pour the white filling into the prepared crust, then dollop spoonfuls of the green mixture on top.
    • Use a toothpick or knife to swirl the colors together.
  • Chill & Serve:
    • Drizzle melted white chocolate over the top (optional).
    • Refrigerate for at least 4 hours, or until set.
    • Garnish with whipped cream, chocolate shavings, or sprinkles before serving.

Notes

  • For a stronger mint flavor, add an extra ¼ teaspoon of mint extract.
  • Swap the chocolate cookie crust for a graham cracker crust for a lighter flavor.
  • This pie can be made up to 2 days in advance and stored in the fridge.
