Description

Savory Cheesesteak Tortellini in Creamy Provolone Sauce is a rich, comforting pasta dish that combines the flavors of a Philly cheesesteak with tender cheese tortellini, sautéed peppers and onions, and a velvety provolone cheese sauce.


Ingredients

  • 1 (20 oz) package cheese tortellini
  • 1 tablespoon olive oil
  • 1/2 lb shaved or thinly sliced steak (ribeye or sirloin)
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 cup shredded provolone cheese
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Chopped parsley, for garnish (optional)

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add sliced steak and cook until browned. Remove and set aside.
  3. In the same skillet, sauté onions and peppers until tender, about 5-7 minutes. Add garlic and cook for 1 more minute. Remove and set aside with steak.
  4. In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk and heavy cream. Cook, stirring constantly, until slightly thickened, about 3-4 minutes.
  6. Reduce heat to low and stir in provolone cheese until melted and smooth. Season with salt and pepper to taste.
  7. Add cooked tortellini, steak, and vegetables to the sauce. Toss to coat evenly and heat through.
  8. Garnish with chopped parsley and serve warm.

  • Use a mix of provolone and mozzarella for extra meltiness.
  • Substitute chicken or mushrooms for the steak for variety.
  • Leftovers can be stored in the fridge for up to 3 days and reheated gently on the stovetop.
