- 1 (20 oz) package cheese tortellini
- 1 tablespoon olive oil
- 1/2 lb shaved or thinly sliced steak (ribeye or sirloin)
- 1 small onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1 cup shredded provolone cheese
- 1/4 teaspoon black pepper
- Salt to taste
- Chopped parsley, for garnish (optional)
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add sliced steak and cook until browned. Remove and set aside.
- In the same skillet, sauté onions and peppers until tender, about 5-7 minutes. Add garlic and cook for 1 more minute. Remove and set aside with steak.
- In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk and heavy cream. Cook, stirring constantly, until slightly thickened, about 3-4 minutes.
- Reduce heat to low and stir in provolone cheese until melted and smooth. Season with salt and pepper to taste.
- Add cooked tortellini, steak, and vegetables to the sauce. Toss to coat evenly and heat through.
- Garnish with chopped parsley and serve warm.

- Use a mix of provolone and mozzarella for extra meltiness.
- Substitute chicken or mushrooms for the steak for variety.
- Leftovers can be stored in the fridge for up to 3 days and reheated gently on the stovetop.
