- 5 oz fresh baby spinach

- 1 tbsp lemon juice (optional)
Instructions
- Heat olive oil and butter (if using) in a large skillet over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until browned and tender.
- Add the spinach and cook for another 2–3 minutes, stirring until wilted.
- Season with salt, pepper, and lemon juice if desired.
- Serve immediately as a side dish or topping.
Notes
- Use a mix of mushrooms for added depth of flavor.
- You can substitute olive oil with avocado oil for a different taste.
- Great as a topping for steaks, pasta, or grain bowls.
