Description

Sausage, Potato, and Kale Soup is a hearty and comforting dish loaded with flavorful sausage, tender potatoes, and nutritious kale in a savory broth—perfect for chilly days.


Ingredients

  • 1 lb Italian sausage (mild or spicy), casing removed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups diced potatoes (Yukon Gold or Russet)
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 3 cups chopped kale, stems removed
  • 1/2 cup heavy cream (optional)
  • Crushed red pepper flakes (optional, for heat)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove and set aside.
  2. In the same pot, add chopped onion and sauté until translucent, about 4–5 minutes. Add garlic and cook for another 30 seconds.
  3. Stir in diced potatoes, chicken broth, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
  4. Return the cooked sausage to the pot and add chopped kale. Simmer for another 5–7 minutes until kale is wilted.
  5. Stir in heavy cream if using, and adjust seasoning as needed.
  6. Serve hot, optionally topped with red pepper flakes for added spice.

Notes

  • Substitute kale with spinach for a milder green.
  • Use turkey sausage for a lighter version.
  • Soup can be made ahead and refrigerated for up to 3 days—flavors improve over time.
