Description

A comforting one‑dish casserole featuring hearty sausage, tender green beans, and soft potatoes in a savory sauce—perfect for a satisfying family meal.

Ingredients

Units Scale
  • 1 lb (450 g) smoked sausage (e.g., kielbasa or Andouille), sliced 1/2‑inch thick
  • 4 cups green beans, trimmed and halved
  • 3 medium potatoes (about 1 lb/450 g), peeled and diced
  • 1 small onion, chopped (about 1/2 cup)
  • 2 cloves garlic, minced
  • 2 Tbsp butter or oil
  • 2 Tbsp all‑purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream or milk
  • 1 tsp Dijon mustard
  • 1/2 tsp dried thyme (or 1 tsp fresh)
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese (optional topping)

Instructions

  1. Preheat oven to 375 °F (190 °C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, melt butter, then sauté onion until translucent (≈3 min). Add garlic, cook 1 min more.
  3. Sprinkle flour over onions, stirring to coat for 1–2 min to cook out raw taste.
  4. Gradually whisk in chicken broth and cream until smooth and thickened.
  5. Stir in mustard, thyme, and season with salt and pepper.
  6. Add the sausage slices, green beans, and diced potatoes; stir to coat everything in sauce.
  7. Transfer mixture to prepared baking dish. Cover with foil.
  8. Bake 30 minutes, then uncover, stir gently, and top with cheese if using.
  9. Return to oven uncovered for another 15–20 minutes until potatoes are tender and cheese is melted/bubbly.
  10. Let rest 5 minutes before serving to allow sauce to set.

Notes

  • Substitute smoked ham or bacon for sausage if preferred.
  • Use half‑and‑half and a tablespoon of sour cream instead of heavy cream for a lighter sauce.
  • Make ahead: assemble in dish, refrigerate up to 24 hrs, then bake before serving.
  • Leftovers store covered in fridge up to 4 days; reheat in oven or microwave.
  • Add a crunchy topping—breadcrumbs tossed with melted butter—during the last bake for extra texture.
