Scale
- 1 lb (450 g) smoked sausage (e.g., kielbasa or Andouille), sliced 1/2‑inch thick
- 4 cups green beans, trimmed and halved
- 3 medium potatoes (about 1 lb/450 g), peeled and diced
- 1 small onion, chopped (about 1/2 cup)
- 2 cloves garlic, minced
- 2 Tbsp butter or oil
- 2 Tbsp all‑purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream or milk
- 1 tsp Dijon mustard
- 1/2 tsp dried thyme (or 1 tsp fresh)
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese (optional topping)
Instructions
- Preheat oven to 375 °F (190 °C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, melt butter, then sauté onion until translucent (≈3 min). Add garlic, cook 1 min more.
- Sprinkle flour over onions, stirring to coat for 1–2 min to cook out raw taste.
- Gradually whisk in chicken broth and cream until smooth and thickened.
- Stir in mustard, thyme, and season with salt and pepper.
- Add the sausage slices, green beans, and diced potatoes; stir to coat everything in sauce.
- Transfer mixture to prepared baking dish. Cover with foil.
- Bake 30 minutes, then uncover, stir gently, and top with cheese if using.
- Return to oven uncovered for another 15–20 minutes until potatoes are tender and cheese is melted/bubbly.
- Let rest 5 minutes before serving to allow sauce to set.
Notes
- Substitute smoked ham or bacon for sausage if preferred.
- Use half‑and‑half and a tablespoon of sour cream instead of heavy cream for a lighter sauce.
- Make ahead: assemble in dish, refrigerate up to 24 hrs, then bake before serving.
- Leftovers store covered in fridge up to 4 days; reheat in oven or microwave.
- Add a crunchy topping—breadcrumbs tossed with melted butter—during the last bake for extra texture.
