Description

This sausage frittata is a savory, protein-packed dish perfect for breakfast or brunch. It’s made with browned sausage, fresh vegetables, and melty cheese all baked into fluffy eggs. Easy to customize and great for feeding a crowd!


Ingredients

  • 8 large eggs

  • 1/4 cup milk (any kind)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 pound ground breakfast sausage (or Italian sausage)

  • 1/2 cup chopped onion

  • 1/2 cup chopped bell pepper

  • 1 cup baby spinach (optional)

  • 1/2 cup shredded cheddar cheese (or your favorite)

 

  • 1 tablespoon olive oil or butter (if needed for cooking)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a medium bowl, whisk together eggs, milk, salt, and pepper. Set aside.

  3. In an oven-safe skillet (like cast iron), cook sausage over medium heat until browned and cooked through. Drain excess fat if needed.

  4. Add onion and bell pepper to the skillet. Cook 3–4 minutes until softened.

  5. Stir in spinach and cook just until wilted.

  6. Spread mixture evenly in the pan. Pour egg mixture over the top.

  7. Sprinkle cheese evenly over the eggs.

  8. Transfer skillet to the oven and bake for 15–20 minutes, or until the eggs are set in the center.

  9. Let cool for a few minutes before slicing and serving.


Notes

  • You can use precooked sausage links—just slice and warm them before adding to the veggies.

  • Try swapping cheddar for feta, goat cheese, or mozzarella.

 

  • Serve with a side salad or toast for a complete meal.
