Description

This Sausage and White Bean Skillet is a hearty, one-pan meal that’s ready in under 30 minutes. Packed with protein, fiber, and savory flavor, it’s perfect for busy weeknights. Serve it with crusty bread or over rice for a complete and satisfying dinner.


Ingredients

  • 1 tablespoon olive oil

  • 1 pound Italian sausage (mild or spicy), casings removed

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 1 (15-ounce) can white beans (cannellini or great northern), drained and rinsed

  • 1 (14.5-ounce) can diced tomatoes, undrained

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • Salt and black pepper, to taste

  • 2 cups fresh spinach or kale (optional)

  • Fresh parsley, chopped (for garnish)

  • Grated Parmesan cheese (for serving)


Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the sausage and cook until browned, breaking it up with a spoon as it cooks, about 5–7 minutes.

  3. Stir in the onion and garlic, and cook until softened, about 3 minutes.

  4. Add the white beans, diced tomatoes with their juices, thyme, and red pepper flakes (if using). Stir to combine.

  5. Let the mixture simmer for 5–10 minutes, allowing the flavors to come together. Season with salt and pepper to taste.

  6. If using spinach or kale, stir it in and cook until wilted, about 2 minutes.

  7. Remove from heat and garnish with fresh parsley and a sprinkle of Parmesan cheese.

  8. Serve hot with crusty bread or over rice if desired.


Notes

  • You can swap the Italian sausage for chicken or turkey sausage for a lighter option.

  • Add extra veggies like bell peppers or zucchini for more flavor and nutrients.
